Wanna do something simple but different for breakfast? How about some pancakes? But instead of making them on a skillet, like you would usually do, try baking them in a muffin pan.
First set the oven to 375 degrees F.
Then make the pancake batter as directed on the box, or however you like making them. I like mixing the pancake mix with almond or soy milk, a little bit of agave nectar, cinnamon, and guava paste. You can throw in some blueberries, chocolate chips, or banana slices instead. (Just giving you ideas.)
Next, pour the mixture in a non-stick muffin pan, half way. Don’t fill it all the way to the top or else it will spill over while baking. Trust me… It happened to me. Rookie mistake, I know.
Bake the mixture for about 15-20 minutes or until they look lightly browned on top.
Now you have a fun and easy way to make breakfast that’ll taste like pancakes, but look like muffins.
Tip: If using guava paste, pour a little bit of the pancake mixture in the muffin pan first. Then place a little piece of the guava paste on top of the served mixture. Once completed, pour in a little more pancake mixture to cover the guava. (Remember to only fill the cup half way.)
