Losing Weight The Vegan Way (Week 4 & 5)

I’m back! I know I didn’t post anything here last week so we have a lot of catching up to do. Gotta say that these past two weeks have been awesome. Lots of working out and great food.

Not sure how much weight I’ve lost though, but I’ve noticed some clothes fitting me better. Just a few days ago I tried on a dress that I hadn’t worn in a while because it seemed a bit tight, but now it looks kinda nice. I may not have a scale with me at all times, but at least my clothes are a good judge of my progress.

I’ve also been trying to be more creative in the kitchen since I’m not eating so much carbs anymore. Must say that it has been fun.

Last saturday, instead of my usual workout, I went to play volleyball with some friends and family. I like changing it up every now and then to keep it interesting, and not get bored.

I recently joined the Team Beachbody online community since I’ve mostly been doing the Insanity workouts. It’s pretty cool how I can keep track of my exercise routine, and I have other Team Beachbody members cheering me on.

Anyway, here is some of the deliciousness I enjoyed these past couple of weeks. Some of my kitchen creativity started off with Vegan Chili, Veggie Creme Soup, Fried Tofu with Veggies, Vegan “Meat” & Veggie Stir-Fry, and a Sweet Green Pepper stuffed with Vegan Crumbled “Meat” and topped with Vegan Cheese.

When I eat out, I also watch what I eat. Last weekend, I went for sushi in this great place in Brickell, FL called “Doraku Sushi.” I also had some veggie pizza a few days ago. I know I need to watch my carbs, but I can’t say no to pizza. (Side note: The pizza did not have any cheese, still it was delicious.) Yesterday, I also had sushi (did I mention I love sushi) at a restaurant called “Tsuki Sushi” in Doral, FL. Another must try.

At Doraku Sushi I started off with some Edamame (not pictured) then had some Grilled Eggplant with Miso Paste, and topped off the night with Bamboo Rolls (vegetable sushi). The veggie pizza is from “Anthony’s Coal Fire Pizza,” and too yummy for words.

I made a lot more veggie and fruit smoothies this week, and I found some great recipes on SimpleGreenSmoothies’ Instagram page. The first one is called the Great Pumpkin Green Smoothie which contains pumpkin, bananas, spinach, almond milk, cinnamon, pumpkin spice and vanilla extract.

The second one was something I made up in the spur of the moment which I’ll call the Berry Tropical Smoothie and it contains water, strawberries, blueberries, raspberries, mango, coconut creme, and silken tofu. I took this one to work yesterday to share with some of my co-workers and it was a hit.

The third one is also from SimpleGreenSmoothies’ Instagram page, called Peach Coconut Dream and it contains peach, green grapes, spinach, and coconut water.

I didn’t have all the ingredients that SimpleGreenSmoothies called for at the time of making them, so I improvised. But the ingredients listed above are the ones from the original recipe.

Last but not least, I had to have some sweetness in my life. And with the fall season upon us, it is pumpkin galore everywhere you go. So I had to make my favorite dessert: Vegan Pumpkin Muffins. These are a must for this holiday season and you can find this recipe right here on my blog. The ones in the recipe contain guava paste which, of course, is optional, but if you like guava you won’t regret adding it. Enjoy!
